Comments:
The hotel has beautiful grounds and encourages relaxing on the loveseat swing, at the outdoor table, or around the pool.
The shower curtains are fabric, but do have a plastic liner. Wastebaskets are lined with plastic. They provide coffee and coffee pots with disposable plastic coffee cups. The plastic cups aren't recyclable, but by being wrapped in plastic we knew they were at least clean.

Review:
The hotel has great potential for being a wonderfully green property. With just a bit of effort they could make a big difference. The property is well maintained (they were replacing old single-pane, aluminum windows with double pane vinyl clad windows when we were there) and clean. The owners are gracious people too. Our carpet was stained, though it was clear they have shampooed it.
We rented a room that was advertised as a two-bedroom suite. Upon check-in discovered that it was really a one bedroom suite with a bed in the living room area. When we asked about that they insisted it's two bedrooms and that nobody else had a problem with the arrangement. Evidently only the unit with the kitchen has two separate bedrooms.
